Michael Werrell
Pastry Director
As Pastry Director at Audrey, Michael Werrell is excited to be a part of a restaurant that is resetting the style and standard of the industry. Born and raised in New Jersey, Werrell knew he wanted to become a chef at just 5 years old. His family provided him with support and guidance from a young age to follow his culinary dreams, and he recalls fond memories of his grandfather –who was a cook in the Korean war –preparing feasts every holiday alongside his mother who taught him to bake. Bringing people together through food was instilled in him from an early age.
Werrell attended The Culinary Institute of America in Hyde Park, New York where he earned an Associate’s degree in Baking & Pastry Arts. Upon graduation in 2013, Werrell got his start in the industry as a pastry chef at Pearl & Ash in New York City.
n 2014, Werrell was a contestant on the Food Network’s International televised show, Rewrapped and was the youngest winner in its history. Over the next four years, he catapulted his career, becoming a Pastry Sous Chef at Italienne, followed by Dominique Ansel Bakery, and finally Eleven Madison Park, all in New York City.
In 2020, Werrell made the move to Music City to be the Pastry Director at Sean Brock’s restaurant, The Continental, which he continues to hold a position as Pastry Director alongside his focus at Audrey. He prides himself on continuously “moving the camera,” a term he has coined for taking a different approach to baking when something isn’t working. “You’ll never get the right shot standing in the same place,” Werrell says. When he’s not baking, he enjoys honing his creativity though photography and interior design.
